Wild boar meat sauce
You need:
- 600 g wild boar mince
- 2 fresh yellow onions
- 20 plum tomatoes
- 2 tbsp Wild One (Zigges Bbq)
- 2 cloves of garlic
- 3 tbsp rapeseed oil
- 2 tablespoons of tomato paste
- 6 dl of pasta
Do this:
Prepare the minced meat the day before and add 2% (10-12g) of salt to the total weight of minced meat. Mix with the minced meat, this allows the meat to bind about 10% of the liquid and you get a finer mince in the minced meat sauce.
Sauté the boar mince in the cast iron pan, finely chop the onion and tomatoes and the finely chopped garlic, let this simmer together for 20-30 minutes on low heat so that the flavors settle.
Meanwhile, boil the pasta, chop some parsley and grate some cheese. Slice some tomatoes and serve.
